Don’t you just love springtime? Everything is new and fresh. That is why spring salads are such a favorite at home. So many delicious vegetables to choose from and ways to mix them, you could have a totally different salad every day for the whole season.
Learning how to take your spring salad from appetizer or side to main dish super star is easy with just a few added touches. Throw in some protein, add a little crunch, or throw in some big veggies and no one will feel cheated by a salad main dish for lunch or dinner. These beautiful and flavorful salads are favorites in my house with kids and adults and you should try one in your home.
4 Super-Charged Spring Salads – From Side Show to Main Event
Asparagus Rice Salad – Serves 2
2 cups cooked brown rice
1 cup fresh asparagus – steam lightly and cut to ½ inch pieces
1 tbsp black olives – pitted and roughly chopped
1 tbsp olive oil
2 tbsp lemon juice
Directions: In a mixing bowl combine the cooked rice, asparagus and olives. Add olive oil and lemon juice to the mixing bowl and toss well.
*Make it the Main Dish: Add a cup of cooked or canned black beans and half a cup of salsa to the salad mixture.
Cucumber and Leek Salad – Serve 2
1 cup cucumber – cubed
1 cup leeks – finely sliced (white part)
½ cup roasted red peppers – jarred, drained and chopped
¾ cup honey Dijon salad dressing
Directions: Add all ingredients to mixing bowl and combine well. Add more dressing if needed.
*Make it the Main Dish: Add 3 cups of cubed grilled chicken and ½ a cup of crumbled goat cheese.
The Best Tuna Salad Ever – Serves 2
2 – 4 oz cans of tuna in water (drained) OR 8 oz of grilled or baked fresh tuna
¼ cup of scallions – sliced thinly
½ cup of cucumber – diced
1 orange – peeled and separated with sections cut in half
1 tbsp capers – rinsed and drained
½ cup of Caesar salad dressing
Directions: Combine scallions, cucumber, orange, capers and flaked tuna in a mixing bowl. Add dressing and mix until well combined.
*Make it the Main Dish: Serve on a bed of Romaine lettuce with garlic croutons and shaved Parmesan cheese.
Simply Spring Salad – Serves 2
3 cups lettuce – coarsely chopped
1 cup arugula
½ cucumber – thinly sliced
4 radishes – thinly sliced
¼ cup spring onions – diced
¾ cup ranch dressing
Directions: Combine lettuce, arugula, cucumber, radishes and onions in a mixing bowl and toss. Drizzle on ranch dressing and toss again making sure you get the ingredients that like to stick to the bottom of the bowl in the dressing out and on top of the salad.
*Make it the Main Dish: Add 3 cups of grilled steak, cut into strips and seasoned with salt and pepper.
